Almond Sponge Cake

Almond Sponge Cake


Serves 6

Preparation time:  10 mins

Cooking time: 25 - 35 mins


This cake is moist and delicious and was an all time favourite cooked by my Mother for the family






150 g / 5 oz ground almonds

1 heaped tbs self raising flour

140 g / 4 oz golden caster sugar

3 large eggs

Icing sugar





  1. Pre-heat the oven to 180c/Fan 170c.

  2. Butter and flour a round cake tin.

  3. Beat the eggs and sugar until light and creamy.

  4. Gradually add the almonds and self raising flour.

  5. Spoon this mixture into the baking tin and cook for 25 - 35 mins - checking with a knife in the centre, which should come out clean and the cake will start to come away from the sides.

  6. Turn onto a wire rack to cool, then dust with icing sugar.
