CARROT ORANGE AND CORIANDER SOUP
1 tbs vinegar
4 oz sugar
½ large onion or small onion
1lb sliced carrots
1 chopped potato
2 bay leaves
3 oz buttter
½ tsp ground coriander
pinch of nutmeg
1½ pt orange juice
1½ pt chicken stock
AND THIS IS WHAT YOU DO……………..
Sweat onions in butter with carrot and potato until soft.
Add bay leaves, coriander and nutmeg.
Add orange juice and chicken stock and simmer until carrots are soft.
Caramelise sugar with vinegar until light brown.Add to soup and then liquidise.
Return to saucepan and reheat.Season according to taste.
Top with croutons, sour cream, sliced oranges, julienne of carrots, sprig of parsley.
