Noodle Stir Fry with Crunchy Peanuts
NOODLE STIR FRY WITH CRUNCH PEANUTS

This is a BBC Good Food recipe, so simple to to prepare and
we thought this was really delicious and will be a regular on the menu!
Serves 3
15 mins to cook, incl. preparation

Ingredients
​
2 tbs crunchy peanut butter
1 tbs soy sauce
2 tbs roasted unsalted peanuts, chopped
300g pack ready to eat egg noodles, or you can simply cook dry egg noodles accordingly to manufacturers instructions
1 tbs olive oil
2 eggs, lightly beaten
300g pack stir fry vegetables
Sweet chilli sauce to serve, optional

AND THIS IS WHAT YOU DO.....

Mix the peanut butter with the soy sauce and 50 ml water, then add the peanuts.

Put the noodles in a bowl and cover them with boiling water, stir to separate the strands, then drain.

Heat a little oil in a wok and pour in the egg, allow the egg to set, chop with a spatula and tip onto a plate and set aside.

Heat a little more oil in the wok, stir fry the veg until starting to wilt and add the noodle.

Return the egg to the wok, spoon in the peanut mixture and toss.

Divide between bowls, sprinkle with more peanuts and then serve with sweet chilli sauce.
