Spicy Lentil Soup
SPICY LENTIL SOUP
Serves 4

Ingredients:
14oz can of lentils
14oz can of chopped tomatoes
1 medium onion finely chopped
2 tbs olive oil
l fat clove of garlic crushed
1-2 tbs balsamic vinegar
1 tbs dried basil
¼ tsp mixed spice
Sea salt and freshly ground black pepper
¾ pint chicken or vegetable stock. (you may want to increase quantity).
AND THIS IS WHAT YOU DO………….

Gently fry the onion in olive oil until soft.

Add the garlic, basil and mixed spice.

Mix together and then add the lentils and chopped tomatoes.

Add vinegar and then add stock according to required thickness.

Stir together and simmer gently for 5 – 10 minutes.

Serve with hot crusty rolls or ciabatta bread.

If made to a thicker consistency, serve with rice and a green salad – baby spinach leaves tossed in french dressing. Or garlic and parsley potatoes mashed in olive oil instead of rice.
