Summer Courgette and Mint Soup

SUMMER  COURGETTE  AND MINT  SOUP

 

Serves 6

Ingredients :

1lb (500 gm) trimmed and thinly sliced courgettes

1 bunch of salad onions thinly sliced

Knob of butter

3 tbs fresh chopped mint

¾ pt of either chicken or vegetable stock

Seasoning to taste

Small carton of natural yoghurt

Garnish chopped mint or chives

 

 

AND THIS IS WHAT YOU DO…………

 

 

  1. Sweat courgettes and onions in the butter for about 6 minutes.
     

  2. Stir in the stock and the mint plus some seasoning and bring to the boil and simmer for a further 8 minutes.
     

  3. Cool the soup, liquidise – if necessary, adjust seasoning.
     

  4. When serving, swirl in the yoghurt and top with either more chopped mint or chives.
