Broccoli and Stilton Soup

BROCCOLI AND STILTON SOUP

 

Preparation time: 15 mins

Cooking time approx. 15 mins

Serves 4

 

Ingredients:

 

2 tbsp olive oil

1 onion, chopped

450ml/¾ pint chicken or vegetable stock

450g/1lb broccoli, broken into florets and tender stems only sliced

Small tub crème fraiche

170g/6oz Stilton, crumbled

Salt and pepper

Parsley

Walnuts

 

 

 

 

AND THIS IS WHAT YOU DO…

 

  1. Heat the oil in a heavy-based saucepan, add the onion and sweat until transparent.
     

  2. Add the stock and broccoli and cook until tender.
     

  3. Add the crème fraiche and Stilton and liquidise until very smooth.
     

  4. Strain the soup into a clean saucepan and reheat gently, but do not boil.Adjust seasoning, according to taste.
     

  5. Garnish with Parsley and Walnuts
