Cheesy Garlic Shrimp Tortilla Melts

Ingredients
Shrimp Filling
• 1 lb cooked shrimp, peeled, deveined, and chopped
• 2 cups mozzarella cheese, shredded
• ½ cup Parmesan cheese, grated
• 4 oz cream cheese, softened
• 1 tsp Italian seasoning
• 1 tsp garlic powder
Tortilla Melts
• 8 large flour tortillas, soft taco size
Garlic Herb Glaze
• 2 tbsp butter, melted
• ½ tsp dried parsley
• ½ tsp garlic salt
Garlic Parmesan Dipping Sauce
• ½ cup unsalted butter
• 4 garlic cloves, minced
• 1 tbsp fresh parsley, chopped
• 1 tbsp lemon juice
• 2 tbsp Parmesan cheese
Method

Prepare the shrimp filling

Pat shrimp dry and chop into small bite-sized pieces.

In a bowl, mix cream cheese, mozzarella, Parmesan, Italian seasoning, garlic powder, and shrimp until creamy and evenly combined

Roll the tortillas

Warm tortillas briefly so they stay soft and flexible.

Spoon filling down the center of each tortilla and roll tightly with the seam tucked underneath.

Glaze the tops

Arrange tortilla melts seam-side down in a greased baking dish.

Mix melted butter, dried parsley, and garlic salt, then brush generously over the tops.

Bake until golden

Bake at 375°F (190°C) for 18 to 20 minutes until the edges are crisp and the cheese is melted and bubbly.

Make the dipping sauce

Melt butter gently in a small skillet.

Add garlic and cook until fragrant, then stir in parsley, lemon juice, and Parmesan cheese.

Serve warm beside the tortilla melts.
