Winter Onion Soup

This a great winter onion soup recipe! It uses only fresh and affordable ingredients, so anyone can make it! It requires no special skills or equipment. The dinner will be filling, delicious and easy to make! Your family will absolutely love it and ask for more!

Serve with hot garlic bread and or side salad.

 

Ingredients:

  • 2 leeks, washed and diced

  • 2 Spanish onions, peeled and chopped

  • 4 medium sized potatoes, peeled and cubed

  • 1 litre Vegetable stock

  • 2-3 tablespoons olive oil

  • Large knob of unsalted butter, (optional)

  • 2 tablespoons of white Miso paste

  • 1 tablespoon white wine vinegar (or you could use Balsamic)

  • One tablespoon of dried thyme or fresh thyme, if available

  • Salt – to taste

  • Black pepper – to taste

  • Cubed bread, fried in butter and herbs (plus garlic, optional)

To Garnish

  • Fresh toasted bread croutons

  • Cream or Yogurt

  • Fresh chopped herbs

  • Toasted seeds

  • Sumac

Method

  1. Chop the leeks, onions and potatoes and add to a large pan with some olive oil and a splash of water and with the lid on, steam fry for about ten minutes.
     

  2. Add the vegetable stock together with Miso, vinegar and thyme.
     

  3. Bring to the boil and then gently simmer for about twenty minutes until the vegetables are soft.
     

  4. Add a generous knob of unsalted butter, this gives a special kind of richness to the soup.
     

  5. Using a hand blender, puree the soup and then adjust the seasoning to taste.
     

  6. You can at this stage add some double cream (optional) for a richer, creamier consistency and taste)
     

  7. Garnish with a swirl of cream, fresh herbs, toasted seeds, a sprinkling of sumac.
