Broccoli and St. Agur Soup
Broccoli and St. Agur Soup
Serves 4

Cooking time approx. 15 mins
Ingredients:

2 tablespoons olive oil
-
1 large Spanish onion, chopped

600ml/¾ pint chicken or vegetable stock
-
450g/1lb broccoli, broken into florets and tender stems only sliced

170g/6oz St, Agur, crumbled (or you could use Stilton)

Salt and pepper (use sparingly as St. Agur is deeply flavoured)

To Garnish

Fresh chopped Parsley
-
Walnuts or Pistachios
Method

Heat the oil in a heavy-based saucepan, add the onion and sweat until transparent.

Add the stock and broccoli and cook until tender.

Add the St. Agur and liquidise until very smooth.

Strain the soup into a clean saucepan and reheat gently, but do not boil.

Adjust seasoning, according to taste.

Garnish with Parsley and Walnuts or Pistachios.
