Carrot, Orange and Coriander Soup

Serves 4

Preparation: 15 minutes

Cooking Time:  About 40 minutes


 

Ingredients:

 

  • 500g / 1lb sliced carrots

  • 1 chopped potato

  • 1 tablespoon vinegar

  • 4 oz sugar

  • ½ large onion or small onion

  • 2 bay leaves

  • 3 oz buttter

  • ½ teaspoon ground coriander

  • pinch of nutmeg

  • seasoning

  • 1½ pt orange juice

  • 1½ pt chicken stock


 

Method

 

  1. Sweat onions in butter with carrot and potato until soft.
     

  2. Add bay leaves, coriander and nutmeg.
     

  3. Add orange juice and chicken stock and simmer until carrots are soft.
     

  4. Caramelise sugar with vinegar until light brown.Add to soup and then liquidise.
     

  5. Return to saucepan and reheat.    Season according to taste.
     

  6. Top with croutons, sour cream, sprinkle of coriander, sliced oranges, julienne of carrots, sprig of parsley.
