Couscous and Tomato Fritters with Feta

 

Makes 8 burgers

 

These are so easy to make and taste really good.   

 

I have been really generous

with the ingredients as these are all about flavour.   

They look pretty as well!

 

 

 

Ingredients:

 

  • 175g/6oz couscous

  • 200ml/7fl oz hot vegetable stock

  • 1 large egg beaten

  • 4 tablespoons natural yoghurt

  • Salt and freshly ground black pepper

  • 200g feta, cut into 1cm cubes

  • 270g pack Sun Blush tomatoes, finely chopped with scissors

  • 1 bunch spring onions,(6 or more) finely chopped including green parts

  • 2 tablespoons Olive oil or instead, use the oil from the Sun Blush tomatoes

Method

 

1.   Preheat the oven to 200C.

 

2.    Measure the couscous into a large heatproof bowl, pour over the hot stock and cover          with cling film. Leave to stand for five minutes or until the couscous is soft and has            absorbed the stock. 
 

3.  Add the egg and yoghurt and mix well.   Season, then fold through the cheese,                  tomatoes and spring onions. 
 

4.  Divide the mixture into eight and shape into burgers, using a pastry cutter makes this        so much easier.
 

5.  The best way to cook these burgers are to place each pattie onto a backing tray or into        a roasting tin, drizzle the oil on top and around each burger and bake in the oven until        golden, which will probably take about 20 minutes.   You could fry these, but I found          they just disintegrated however careful I tried to be, so baking is better!
 

6.  Serve with a green salad and a spoonful of your favourite chutney.   Alternatively,              serve this with another vegan or vegetarian dish or two.  We served these with

       Beets Roasted with Balsamic Dressing Cauliflower, Garlic and Walnut Mash​
