Prawn and Chorizo Paella
Prawn and Chorizo Paella
Serves 4

Cooking Time: 25 - 30 mins
This is a quicker and less extravagant version of the traditional Spanish Paella and you can substitute green beans with mange touts or other vegetables accordingly.
Ingredients:

2-3 tablespoons Olive oil

Large spanish onion, sliced

Pack of chorizo sausage sliced (be careful not to choose one with too much chilli!)

250g Arborio or Paella rice

Pack of green beans chopped
-
2 red peppers, sliced
-
1 litre Chicken stock
-
2 x packs frozen mixed seafood
-
2 lemons, cut into eight wedges

Parsley
Method
1. Heat some olive oil in a large flat pan and add the onion and peppers and cook until softened.
2. Add sliced chorizo until juices run. Then add the beans. (If using mange touts, wash them, chop in half and cook separately for about 3 minutes and add before serving.)
3. Stir in rice and gradually add the stock.
4. Towards end of cooking time, add the seafood and lemon. Stir constantly.
5. Before serving, add seasoning and parsley
6. Serve with a salad, lemon wedges and crusty bread.
