Roasted Veggie Salad
  1. Roasted Veggie Salad

  1. A healthy-friendly option perfect for any occasion. A dessert-friendly option perfect for any occasion. A high protein-friendly option perfect for any occasion.

  3. Ingredients:

  4. 1 cup mixed roasted vegetables (such as zucchini, bell peppers, and carrots – healthy-friendly)

  5. 1 cup grilled halloumi or feta cubes (high protein-friendly)

  6. 1/2 cup fresh strawberries or pomegranate seeds (dessert-friendly)

  7. 2 cups mixed greens (like arugula or spinach)

  8. 2 tbsp olive oil

  9. 1 tbsp balsamic glaze

  10. Salt and black pepper to taste

  11. Optional: toasted walnuts or almonds for crunch

Method

Mix all ingredients, toss and serve
