Roasted Vegetable Soup with Halloumi Croutons

Ingredients
Cauliflower
Red onions
Peppers
Aubergines
Squash
Tomatoes
Whole garlic
Olive oil
Seasoning
Coconut Milk
Halloumi toasted
Pine Nuts
Coriander
-
Tomato puree
-
Ground ginger
-
1 tbsp ras el hanout
-
Lemon
-
Hot stock
-
1½ tbsp olive oil
-
1.3l hot vegetable stock
-
6 tbsp Greek-style yogurt and 1 tbsp finely chopped mint or coriander, to serve (optional)
Method
Roasted veg with olive oil, add to pan, with spices, coconut milk, stock, lemon, tomato puree, blitz and garnish with pine nuts, toasted halloumi and coriander and swirl of yogurt.
