Roasted Winter Fruits

 

Serves 4

Cooking Time:  25 mins

Ingredients

 

  • 3 pears

  • 3 apples

  • 4 - 6 plums

  • 4 figs

  • 150 ml cranberry juice

  • 1 cinnamon stick

  • 75g demerara sugar

  • Ice cream, cream or crème fraîche to serve

 

 

 

Method

 

  1. Pre-heat the oven to 200C / Gas 6.
     

  2. Cut the pears, apples and plums into wedges, removing the cores and stones.
     

  3. Place in a single layer in a roasting tray.
     

  4. Cut the figs into quarters and add to the tray.
     

  5. Pour over the cranberry juice, scatter the sugar and snap the cinnamon stick in half before also adding to the tray.
     

  6. Place in the oven for about 25 minutes until the fruits are softened but still hold their shape and the juices in the tray are lightly syrupy.
     

  7. Spoon into dishes and serve warm with ice cream, cream or crème fraîche or one my ICE CREAM recipes.
