Tomato Tarte Tatin

Tomato Tarte Tatin
Serves 4

Cooking time 25 mins
I love Tarte Tatins, both savoury and sweet and this is such an easy and quick dish to prepare for a light lunch or supper - serve with a green salad and new potatoes.
Ingredients:

250g/9oz ready made puff pastry or Vegan Pastry

1 tablespoon olive oil

25g/1oz butter

2 garlic cloves, crushed

4 beef or 8 plum tomatoes, sliced into three

A few sprigs of fresh thyme

Sprinkling caster sugar

Parmesan, to serve
Method
1. Heat over to 200c/Fan 180c/Gas 6.
2. Heat the oil and butter in an ovenproof frying pan with the garlic.
3. Place the tomatoes overlapping in circle and fry until beginning to brown at edges. Sprinkle over thyme, sugar and seasoning and cook gently.
4. Meanwhile, roll out pastry on floured surface to slightly larger size than the pan. Remove the pan from the heat, cover with the pastry, tucking the edges down into sides of the pan.
5. Bake tart for about 20-25 minutes until pastry is crisp. Loosen edges, place large plate over pan and invert tart.
6. Serve warm with cheese scattered over and a side salad.
