Crispy Cheese Cocktail Snacks

These are absolutely scrummie !!!
You can also add some sweet Paprika for extra flavour, ½ - 1 teaspoonful.
Caution when adding the Cayenne Pepper - it can make these extremely spicy!

Ingredients:

1 cup (113g) strong mature cheddar cheese

1 cup (113g) parmesan cheese

1 cup or 226g salted butter

2 cups self raising flour

Quarter teaspoon cayenne pepper, or just a pinch (it can be very fiery!!)
2 teacups rice krispies
Method

Pre heat oven to 200°.

Mix together cheddar, parmesan and butter.

Fold in flour, cayenne and rice krispies.

Put teaspoon mound into the palm of your hand, roll into a ball and then place onto a greased baking sheet. Then flatten gently with a fork. Space out well as these flatten and spread as they cook.

Cook for 10 – 15 minutes until golden and crispy. Watch very carefully and don't let them darken too much.

Turn out onto a wire rack to cool. They can be very crumbly so best to use a flat spatula very gently to transfer.

These can be stored in an air tight container for a few days with a piece of kitchen paper between each layer - trust me, they will get eaten very quickly!!!!
