Crispy Cheese Cocktail Snacks

Plan:  Prepare in advance and store in airtight container layered with greaseproof paper

These are absolutely scrummie !!!

 

You can also add some sweet Paprika for extra flavour, ½ - 1 teaspoonful.

Caution when adding the Cayenne Pepper - it can make these extremely spicy!

Ingredients:
 

  • 1 cup (113g) strong mature cheddar cheese

  • 1 cup  (113g) parmesan cheese

  • 1 cup or 226g salted butter

  • 2 cups self raising flour

  • Quarter teaspoon cayenne pepper, or just a pinch (it can be very fiery!!)

2 teacups rice krispies 




Method

  1.   Pre heat oven to 200°. 
     

  2.  Mix together cheddar, parmesan and butter. 
     

  3.  Fold in flour, cayenne and rice krispies. 
     

  4.  Put teaspoon mound into the palm of your hand, roll into a ball and then place onto a greased baking sheet.  Then flatten gently with a fork.  Space out well as these flatten and spread as they cook.
     

  5.  Cook for 10 – 15 minutes until golden and crispy.   Watch very carefully and don't let them darken too much.
     

  6. Turn out onto a wire rack to cool.   They can be very crumbly so best to use a flat spatula very gently to transfer.
     

  7. These can be stored in an air tight container for a few days with a piece of kitchen paper between each layer - trust me, they will get eaten very quickly!!!!
