Fluffy Cottage Cheese Blueberry Cloud Bread

Airy, melt-in-your-mouth bites with sweet blueberry bursts
high-protein and heavenly!
Ingredients:

½ cup blended cottage cheese
-
3 large eggs, separated

1 tbsp cornstarch (or almond flour)
-
½ tsp vanilla extract
-
1 tbsp honey or sweetener (optional)

⅓ cup fresh or frozen blueberries
Method

Preheat oven to 300°F (150°C). Line a baking sheet.

In a bowl, mix egg yolks, cottage cheese, vanilla, cornstarch, and sweetener.

Beat egg whites until stiff peaks form.

Gently fold into yolk mixture. Then fold in blueberries carefully.

Scoop fluffy rounds onto baking sheet (makes 5–6).

Bake 25–30 mins until golden and set. Cool slightly.
