 Herbed Goat's Cheese and Cream Cheese Savoury Cheesecakes withTomato-Avocado Salsa

Herbed Goat's Cheese & Cream Cheese Cheesecakes

Preparation time: 20 minutes

Chilling time: 4 hours (or overnight)

Servings: 8 

This is a first, I half copied a recipe and lost the rest - so fed it into AI and this is what it came up with!!!

Ingredients:

For the Base:

  • 100 g salted crackers (e.g., oatcakes or crispbread)

  • 50 g melted unsalted butter

  • 20 g finely grated Parmesan 

For the Cheesecake Filling:

  • 200 g soft goat's cheese

  • 200 g cream cheese (fully softened)

  • 100 ml double cream (or sour cream)

  • 1 tbsp chopped fresh herbs (chives, thyme, and parsley)

  • 1 tsp lemon zest

  • Salt and freshly ground black pepper to taste

 

Tomato-Avocado Salsa:

Preparation time: 10 minutes 

  • 200 g ripe cherry tomatoes, diced

  • 1 medium ripe avocado, peeled, pitted, and diced

  • 1 tbsp finely chopped fresh basil

  • 1 tsp fresh lemon juice

  • 1 tbsp extra virgin olive oil

  • 1/4 tsp salt (plus a pinch of cracked black pepper)

 

Step-by-Step Method

1. Prepare the Crust:
Crush the crackers into fine crumbs and mix thoroughly with the melted butter and grated Parmesan. Press the mixture firmly into the bottoms of 8 individual ramekins or silicone muffin moulds lightly greased or lined with cling film. Chill in the refrigerator for 10 minutes.

2. Make the Filling:
In an electric mixer, whip the softened cream cheese until perfectly smooth. Add the goat's cheese, double cream, lemon zest, herbs, salt, and pepper, beating until fluffy and free of lumps.

 

3. Assemble and Set:
Spoon the cheese mixture over the prepared crusts, smooth the tops, and cover. Refrigerate for at least 4 hours (overnight is best) to allow the cheesecakes to set firmly.

 

4. Mix the Salsa:
Just before serving, gently toss the diced tomatoes, avocado, and chopped basil in a bowl with the olive oil, lemon juice, salt, and pepper.

 

5. Serve:
Unmould the individual cheesecakes onto plates and crown each one with a generous spoonful of the salsa.
