Miso Ginger Carrot Salad

Delicious salad side dish for the Summer.
Ingredients:
• 1.25 lbs carrots
• 3 tbsp extra-virgin olive oil
• 1/4 cup fresh orange juice
• 1 tbsp white miso paste
• 1 tbsp rice vinegar
• 1 tsp maple syrup
• 2 tsp ginger, grated
• 1 garlic clove, minced
• sesame seeds, for topping
• green onion, for topping
Method

Wash the carrots, peel if needed, then continue using veg peeler to create strips of carrot and place in serving bowl.

Mix together the remaining ingredients to create a dressing and toss together.

Garnish with chopped green (Spring) onions and sesame seeds.
