Pesto Palmiers


Serves 4

Ideal to serve with pre-dinner drinks!  And inspired by my friend Rosa, who is a brilliant cook and is first

class at making tasty cocktail snacks






1 pack ready rolled puff pastry

¾ jar red pesto and/or green pesto

One egg, beaten

55g / 2oz Parmesan, grated.




  1. Preheat the oven to 200c/Fan 180c/Gas 6.

  2. Unroll the pastry. Roll out on a floured board.

  3. Spread over the pesto, and scatter over half the Parmesan cheese.

  4. Roll the pastry up from the short sides, inwards towards the centre.

  5. Cut into 1 cm strips. Lay, on their sides, on two non-stick trays.

  6. Brush palmiers with an egg wash and then scatter the rest of the Parmesan over half of the palmiers.

  7. Bake in the oven for 7-8 minutes or until golden brown.

  8. Cool on a wire rack.
