Pesto Palmiers
Serves 4

Ideal to serve with pre-dinner drinks! And inspired by my friend Rosa, who is a brilliant cook and is first
class at making tasty cocktail snacks
Ingredients:
1 pack ready rolled puff pastry
¾ jar red pesto and/or green pesto
One egg, beaten
55g / 2oz Parmesan, grated.
AND THIS IS WHAT YOU DO…

Preheat the oven to 200c/Fan 180c/Gas 6.

Unroll the pastry. Roll out on a floured board.

Spread over the pesto, and scatter over half the Parmesan cheese.

Roll the pastry up from the short sides, inwards towards the centre.

Cut into 1 cm strips. Lay, on their sides, on two non-stick trays.

Brush palmiers with an egg wash and then scatter the rest of the Parmesan over half of the palmiers.

Bake in the oven for 7-8 minutes or until golden brown.

Cool on a wire rack.
