Salmon Puff Pastry Bites

These are so good and easy to make.
You could use parma ham instead of smoked salmon.
Perfect for entertaining.
If you want more than the amount this makes, you will need
a bit more salmon or ham and a second roll of pastry to place on to
the top of the first one, which would be completely covered with your chosen filling.
You would then need to halve the double pastry right across the middle
in order to get twice the number of strips to roll up.
Utensils

Large silicon mat for rolling the pastry

Rolling pin

Baking sheet

Reusable silicon baking sheet to go on the metal baking sheet

Chopping board

Sharp knife

Box grater
-
Small bowl and pastry brush for beaten egg
Ingredients

Flour for dusting

375g puff pastry rectangle (this needs to be rolled out on a floured board)

Small pack of sliced smoked salmon or parma ham
-
Pack of Philadelphia cream cheese, or similar, or Boursin (garlic and Herb cream cheese)

Free range egg, beaten for glazing.
Method

Pre heat oven to 200°, 180 Fan, 350F, Gas 6

Flour a large board and place the puff pastry (which needs to be defrosted to room temperature) and cover with a sheet of greaseproof paper.

Roll out onto a floured board or silicon baking sheet.

Spread the cream cheese over the top of the pastry right to the edges as uniformly as possible on the top half only (landscape shape) as you will be folding the plain pastry up over to cover the cream cheese filling.

Lay the salmon or parma ham on to top of the cream cheese and then carefully fold up the pastry as neatly as possible to cover the filling.

Using a sharp knife or pizza cutter (which is ideal for this purpose) cut even strips ready to roll up as shown in the photo above.

Arrange the rolls on a lined baking sheet well spaced, and brush with beaten egg.

Place into the oven for 10 - 15 minutes but keep checking as they need to come out when they are both risen and a gorgeous golden colour.

Remove from the oven and place on a wire rack to cool and then serve either slightly warm or cool.
