Strawberry Caprese Salad

A fresh Summery Starter, ideal for entertaining, looks cool and delicious and is a little different.
For the cream of mozza:
300g of mozzarella
300g yogurt
A handful of basil
3 tablespoons of olive oil
2 tablespoons of honey
Salt and pepper
The zest of a yellow lemon
For the Vegetables :
450g cherry tomatoes (quarter cut)
450g of strawberries cut into pieces
One red onion finely chopped
Juice of one lime
For the Garnish:
Handful chopped parsley
One cup of breadcrumbs
4 tablespoons of olive oil
3 small garlic cloves
1 tablespoon sweet paprika
Salt and pepper
Garnish with basil leaves
Method

To make the toasted garnish, mix breadcrumbs with oil, parsley, garlic, a little paprika and salt. Sauté mix in a pan for 7-8 min, stirring constantly until crunchy and golden - set aside.

Mix together the mozzarella, yogurt, basil, olive oil, honey, seasoning and lemon zest and whizz in a food processor.

Cut the cherry tomatoes into quarters, cut the strawberries into pieces, and finely chop the red onion and mix with the juice of one lime.

To Assemble: Spread the cream onto a dish, top with the vegetables and fruit and finally with the crunchy herb topping.

To be enjoyed with crackers, either to share as an aperitif, or for a small colorful starter that is bound to impress your guests.
