Warm Burrata & Garlic Roasted Veggie Skillet
Ingredients
For the Roasted Vegetables
1 small zucchini, sliced
1 small yellow squash, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes
1 small red onion, sliced
3 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon dried oregano
Salt and black pepper to taste
For the Burrata
2 balls burrata cheese
Fresh basil leaves, for garnish
Drizzle of olive oil
Directions
1. Roast the Vegetables
Preheat oven to 200°C / 400°F.
In a large bowl, toss zucchini, yellow squash, bell pepper, cherry tomatoes, red onion, and garlic with olive oil, oregano, salt, and pepper.
Spread evenly on a baking sheet.
Roast for 20–25 minutes, until vegetables are tender and slightly caramelized.
2. Prepare the Skillet
Transfer roasted vegetables to a large oven-safe skillet.
Nestle burrata balls on top of the warm vegetables.
Place under a broiler or in the oven for 2–3 minutes, just until burrata softens and becomes creamy.
3. Assemble
Drizzle lightly with olive oil and garnish with fresh basil leaves.
4. Serve
Serve immediately as a warm appetizer or light main dish.
