Parsley – Easy Breaded Chicken Recipe

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup halved cherry tomatoes

  • 1 zucchini, sliced

  • 1 red onion, cut into wedges

  • 1 bell pepper, sliced

  • 1/4 cup balsamic vinegar

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper, to taste

  • Fresh basil, for garnish

Method

  1. Preheat oven to 400°F (200°C).

  2. Whisk balsamic vinegar, olive oil, garlic, oregano, thyme, salt, and pepper in a large bowl.

  3. Add chicken breasts, coating well. Marinate at least 15 minutes.

  4. Place chicken in the center of a baking dish or sheet pan. Arrange veggies around.

  5. Pour remaining marinade over the top.

  6. Bake 25–30 minutes, until chicken reaches 165°F (75°C) and veggies are tender.

  7. Garnish with fresh Basil and serve with a fresh salad.
