Parsley – Easy Breaded Chicken Recipe
Ingredients

4 boneless, skinless chicken breasts

1 cup halved cherry tomatoes

1 zucchini, sliced
-
1 red onion, cut into wedges
-
1 bell pepper, sliced
-
1/4 cup balsamic vinegar
-
2 tablespoons olive oil
-
2 cloves garlic, minced
-
1 teaspoon dried oregano
-
1 teaspoon dried thyme
-
Salt and pepper, to taste

Fresh basil, for garnish
Method

Preheat oven to 400°F (200°C).

Whisk balsamic vinegar, olive oil, garlic, oregano, thyme, salt, and pepper in a large bowl.

Add chicken breasts, coating well. Marinate at least 15 minutes.

Place chicken in the center of a baking dish or sheet pan. Arrange veggies around.

Pour remaining marinade over the top.

Bake 25–30 minutes, until chicken reaches 165°F (75°C) and veggies are tender.

Garnish with fresh Basil and serve with a fresh salad.
