Crunchy Thai-Inspired Salad with Peanut Dressing

This vibrant, crunchy salad is loaded with colorful veggies, plant-based protein, and healthy fats to keep you full and energized. With gut-loving fiber from cabbage and carrots, anti-inflammatory herbs and spices, and satisfying tofu and cashews, it checks all the boxes for a nourishing, balanced meal. Plus, the creamy peanut dressing is so good, you’ll want to drizzle it on everything!
Ingredients
Salad:
• 3 cups chopped green cabbage
• 2 cups chopped purple cabbage
• 1 cup diced cucumber
• ½ cup sliced green onion
• 1 cup diced bell pepper
• 1 cup shredded carrots
• ½ cup chopped cilantro
• 1 cup air-fried tofu
• ½ cup chopped roasted cashews
Dressing:
• ½ cup peanut butter
• 3 tbsp soy sauce (or tamari for gluten-free)
• 1 tsp sriracha
• 2 tbsp rice vinegar
• 1 tbsp lime juice
• 1 tbsp toasted sesame oil
• 1 tbsp maple syrup
• 1 tsp grated fresh ginger
• 1 tsp minced garlic
Whisk all dressing ingredients until smooth. Toss with salad or store separately. Keeps well in the fridge for up to 5 days!
