Gooey Chocolate Pudding

This is a real comfort dish of deliciousness!! It is rather like a large fondant with a baked sponge exterior and the melted interior spills out when you dive in! Serve with lashings of double cream and forget the calories!!!
Ingredients

140g plain chocolate (or chocolate chips)

140g butter

1 teaspoon vanilla essence

8 tablespoons warm water

113g castor sugar

4 eggs - separated (beat the yolks)

30g self-raising flour

Half a teaspoon cream of tartar
Method

Pre-heat the oven to 200C - Gas 6.

Grease a 3 pint (1.7 litres) ovenproof dish and put into a roasting pan half full of water - to be placed on centre shelf.

Melt chocolate with the vanilla essence and butter in a bowl over a pan of very hot water.

Stir in the warm water and sugar and stir until smooth.

Pour the chocolate mixture into a large mixing bowl and stir in beaten egg yolks and flour - whisk until smooth.

Add cream of tartar to egg whites and whisk until they stand in peaks.

Using a metal spoon, carefully fold lightly into the chocolate mixture and pour the entire mixture into the greased ovenproof dish.

Bake for 10 minutes.

Turn down heat 180C - Gas 3 for 30 minutes.

Serve either hot or cold with plenty of thick cream.
