Marry Me Sausage Orzo Soup

Ingredients

453g Italian sausage

1 medium onion, chopped

2 sticks celery, chopped

2 cloves garlic, minced
-
1 can chopped tomatoes
-
1 tablespoon tomato paste

4 cups chicken broth
-
1 teaspoon dried oregano
-
1 teaspoon dried basil
-
1 cup orzo pasta
-
1 cup heavy cream or natural plain yogurt

Salt and pepper, to taste

Fresh Spinach, for garnish
Method

Sauté chopped onion, carrots and celery until crisp-tender.

Add Italian sausage and cook until browned.

Add garlic, tomato paste, parsley, salt, oregano, basil. Cook for 1-2 minutes.

Add broth, diced tomatoes and orzo, bring to a boil, then reduce heat and simmer for 10 minutes.

Stir in heavy cream. Adjust liquid, if necessary with extra boiling water.

Add fresh spinach leaves just before serving and season to taste. Serve with crusty bread or a side salad.
