Marry Me Sausage Orzo Soup

Ingredients
453g Italian sausage
1 medium onion, chopped
2 sticks celery, chopped
2 cloves garlic, minced
1 can chopped tomatoes
1 tablespoon tomato paste
4 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup orzo pasta
1 cup heavy cream
Salt and pepper, to taste
Fresh Spinach, for garnish
Method
Sauté chopped onion, carrots and celery until crisp-tender. Add Italian sausage and cook until browned. Add garlic, tomato paste, parsley, salt, oregano, basil. Cook for 1-2 minutes. Add broth, diced tomatoes and orzo, bring to a boil, then reduce heat and simmer for 10 minutes. Stir in heavy cream. Add fresh spinach leaves just before serving and season to taste. Serve with crusty bread or a side salad.
