Marry Me Sausage Orzo Soup

Ingredients

 

  • 453g Italian sausage

  • 1 medium onion, chopped

  • 2 sticks celery, chopped

  • 2 cloves garlic, minced

  • Half cup of sun-dried tomatoes, cut into small pieces

  • 1 can chopped tomatoes

  • 1 tablespoon tomato paste

  • 4 cups chicken broth

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 cup orzo pasta

  • 1 cup heavy cream or natural plain yogurt

  • Salt and pepper, to taste

  • Fresh Spinach, for garnish

 

 

Method

 

  1. Sauté chopped onion, carrots and celery until crisp-tender.  
     

  2. Add Italian sausage and cook until browned.  
     

  3. Add garlic, tomato paste, parsley, salt, oregano, basil.  Cook for 1-2 minutes.  
     

  4. Add broth, diced tomatoes and orzo, bring to a boil, then reduce heat and simmer for 10 minutes.  
     

  5. Stir in heavy cream. 
     

  6. Add fresh spinach leaves just before serving and season to taste.  Serve with crusty bread or a side salad.
