Spicy Mango Ginger Chicken Salad

Ingredients:
2 chicken breasts, cooked and shredded
1 ripe mango, diced
1 cup shredded carrots
1/2 red bell pepper, thinly sliced
1/4 cup red onion, thinly sliced
2 cups mixed greens
2 tablespoons fresh cilantro, chopped
Dressing:
2 tablespoons lime juice
1 tablespoon soy sauce
1 tablespoon honey or maple syrup
1 teaspoon grated fresh ginger
1 teaspoon chili flakes or sriracha (optional)
1 tablespoon sesame oil
Instructions:
In a large bowl, combine shredded chicken, mango, carrots, bell pepper, red onion, and mixed greens. (Time: 5 minutes)
In a small bowl, whisk together lime juice, soy sauce, honey, ginger, chili flakes, and sesame oil until smooth. (Time: 2 minutes)
