This is an ideal accompaniment to Slow Cooked Lamb and other roast meats - so quick and easy.
Or try serving this with any of the Game dishes.
Utensils

Chopping Board

Sharp knife

Bowl for discarded outer leaves etc

Large frying pan or sauté pan with lid

Large colander for prepared vegetables
Ingredients

Sweetheart Cabbage, finely sliced
-
6 Spring Onions, sliced diagonally

Large fennel, finely sliced
-
One Leek, finely sliced

Olive Oil
-
Generous knob of butter
-
2-3 tablespoons water
-
Handful of fresh chopped herbs - parsley, dill, oregano
Method

Pour 2-3 tablespoons of olive oil into a large frying pan and a generous knob of butter (if using) and as soon as this has melted, add the vegetables and 2-3 tablespoons of water.

Stir the vegetables to coat, add some seasoning and put the lid on the pan and allow to steam for 4-5 minutes - be careful not to overcook or the vegetables will become soggy and lose their colour.

Remove from the heat and stir in the chopped herbs and serve immediately.
