Greek Beef Wraps with Herbed Yogurt Sauce

If you do not wish to use Tortilla wraps, there are three alternative
ideas for creating wraps purely from vegetables, eggs and cheese.
Or you could use fresh crispy cabbage leaves or lettuce leaves.
As with so many of my recipes, you can substitute the beef for chicken, turkey,
Quorn, Tofu or salmon, prawns or any other fish.
Try pickling red onion and/or red cabbage in red wine vinegar
and sugar and store in the fridge for up to three weeks in a jar with lid.
Ingredients
For the Beef

500 g ground beef or cubed beef steak

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and black pepper to taste
For the Herbed Yogurt Sauce
-
½ cup plain Greek yogurt
-
1 tablespoon lemon juice
-
1 tablespoon chopped fresh parsley or dill
-
1 clove garlic, minced
-
Salt and black pepper to taste
For the Wraps
4 large whole wheat tortillas or flatbreads
1 cup chopped lettuce or mixed greens
1 medium tomato, diced
½ small cucumber, diced
½ cup red onion, thinly sliced and pre-marinaded in pickling liquid of vinegar and sugar
¼ cup crumbled feta cheese
Method
1. Cook the Beef
Heat olive oil in a skillet over medium-high heat.
Add ground beef, garlic powder, oregano, smoked paprika, salt, and pepper.
Cook for 6–8 minutes, stirring occasionally, until beef is fully cooked and lightly browned.
2. Prepare the Herbed Yogurt Sauce
In a small bowl, mix Greek yogurt, lemon juice, minced garlic, parsley or dill, salt, and pepper until smooth.
3. Assemble the Wraps
Lay out tortillas or flatbreads.
Layer each with chopped lettuce, diced tomato, cucumber, red onion, and cooked beef.
Drizzle generously with herbed yogurt sauce and sprinkle with crumbled feta.
4. Serve
Fold the wraps and serve immediately while warm.
