





Tortilla Quiche Bake

This looks and tastes delicious and incredibly easy to make.
It is a very versatile recipe and you can use any combination
of vegetables that you fancy.
You can use whatever vegetables you like, but they
need to be chopped up quite small.
The tortillas make an excellent alternative to the usual pastry, it comes
out thin and crispy.
These Tortilla Quiches are surprisingly filling and make
a terrific lunch.
Utensils:

2 x 8" cake tins

Chopping board and sharp knife
-
Small bowl for tomatoes and any other finely chopped veg
-
Large bowl for the egg and cottage cheese
-
Balloon whisk
-
Frying pan and spatula
Ingredients:

Two 12" tortilla
-
3 eggs
-
Small carton of cottage cheese
-
Salt and pepper to taste
-
One red onion, finely chopped
-
Large knob butter
-
Handful of chopped cherry tomatoes (you can use any combination of your favourite veg)

Handful of fresh baby spinach
-
Grated cheddar
-
Fresh parsley for garnish (optional)
Method

Preheat the oven to 180C.

In an oven proof, non stick frying pan or I used two 8" cake tins, line with a large circular sheet of tortilla.

Into a large bowl, break three eggs and add some seasoning.

Now add salt and pepper, stir thoroughly using a balloon whisk.

Now add a small carton of cottage cheese.

With the balloon whisk, gently whip this mixture, set aside.

In a frying pan, add some butter and melt. Add the onion, cover the pan with a lid and let this fry steam for about three to five minutes.

Add plenty of spinach to the onion, replace the lid. The spinach will wilt down to almost nothing so you can be as generous as you like with this portion.

Cut the cherry tomatoes in half and at this stage you could also add handfuls of your favourite veg, which needs to be finely chopped.

To Assemble:
Spoon the onion and spinach into each bowl of the tortilla, as shown in the image above

Arrange the tomatoes and any other vegetables onto the top of the spinach.

Spoon the egg mixture onto the top of the vegetables and spread this out evenly.

Finally, sprinkle with grated cheddar, as little or as much as you wish.

Bake in the oven for 20 - 25 minutes until golden and bubbling.

Remove from the oven, using a large spatula, slide onto plates and enjoy!
